This cooling and nutritious summer Peach + Fennel veggie platter is sure to give you a healthy dose of cleansing nutrition as well as luscious colors for the eyes to feast on.
For this platter, I bought a brand new mandoline, since I wanted the radishes to display their awesome radish color. It was my first time using a good mandoline, and it was soooooo awesome! I love it! Slicing, dicing, and shaving shenanigans and pics coming soon.
The ingredients in the list can be made as a salad and mixed quickly for fast, easy, and nutritious eats. The sweetness of the peaches mixes well with the anise flavor of the fennel. And the feta helps to add savoriness to the overall palate. Therefore, it is emphasized to get a good savory feta cheese that is creamy and has depth. Since this was a quick setup, originally created for a food photography challenge, the cheese used for this plate is trader joe’s feta crumbles. I found it surprisingly creamy and had a sufficient amount of savoriness. However, this cheese to also nice and savory! I also used TJ’s organic Persian cucumbers which I am a regular fan of, they are so sweet and crunchy!
The peaches need to be sweet in order to balance out the raw veggies. I have generally found yellow peaches to be sweeter than white, however, of course use what is preferred. It’s peach season now, so you are sure to be in luck to find some sweet, ripe peaches at the grocery store! Try this veggie platter for quick detox fueling and recharging!
