These quick pickled carrots you can make in a jar are perfect for snacking or to put into wraps or sandwiches for a tangy crunch surprise.
5 Ingredients For Pickled Carrots
- Carrots
- Water
- Vinegar
- Sugar
- Salt
Directions
- Bring Water, Sugar, Salt and Vinegar to a simmer or boil
- Pour over carrots and allow to cool a bit
- Refrigerate for 3-24 hours. The longer the more tangy/flavor. However, you can eat them in about an hour and will get some flavor but perhaps not a full absorption of the vinegar into the carrots.

Pickled Carrots in a Jar
A great way to integrate healthy raw vegetables into the diet. Eat by itself or on sandwiches or inside wraps

Ingredients
- 1 lb carrots, shredded or chopped
- 1/2 cup champagne vinegar
- 1/2 apple cider or white vinegar
- 1/2 tsp salt
- 1 1/2 tbsp sugar
Instructions
- Combine vinegars, salt, and sugar and heat over stovetop until simmer. Alternatively, you can put it in the microwave instead.
- Put carrots in a jar, and pour hot vinegar mixture into jar. Allow to cool down a bit and place in the refrigerator for 3-24 hours. The longer the more tangy flavor. If in a hurry, you can sample the mixture in a few hours to see if the vinegar has infused enough to your liking.
Notes
- I tried to use only white vinegar and it did not taste as good. So I suggest another type to blend with the mixture. I like champagne and you can also use apple cider vinegar. The type of vinegar you use will determine the final nuance in taste. Therefore, you can sample the vinegar mixture after heating, and add, subtract or modify the acidity and/or sweetness.
- You can add various types of seeds if you like. For saurkraut the most common seed is caraway.
