
What Other Veggies Can I Use?
This veggie fried rice is customizable. I used napa cabbage here, however feel free to add whatever veggies you love. You can also use this basic recipe for “kitchen clean out” days when you are looking to use lots of what you have left in your kitchen (whether it be veggies or leftover tofu, chicken, etc).
For ideas, you might add the standard peas and carrots, or tomatoes and eggs, or perhaps even yellow squash with tamari chicken for example. You can find a Napa Cabbage with Liquid Aminos recipe here, which I added to the rice also.
What the Heck is “Liquid Aminos?”
Liquid aminos, imo is a more umami and savory version of soy sauce. It is also gluten-free, for those that have a gluten allergy and cannot have regular soy sauce, which normally contains traces of gluten. IMO, it tastes a lot better than soy sauce. I have always only used Bragg’s Liquid Amino’s which is a really popular brand.

What Kind of Rice Do I use? Can I just use what I have?
Of course! We suggest jasmine rice because it is the most fragrant, and you’ll really get a lot out of the aroma and even an excellent experience from cooking with it. However, if all’s you gots is plain white rice, that works just fine:)
Veggie Fried Rice with Napa Cabbage

A flavorful and fragrant rice dish with delicate and light veggies that is also customizable. FoodforSoul.co
Ingredients
- I cup cooked jasmine rice
- 1/4 onion, diced
- 2 eggs
- 4 cloves of garlic (chopped)
- 4 dashes of Bragg's Liquid Aminos (adjust to taste)
- 2 tbsp avocado oil
- 1/2 tsp sesame oil
- 1-2 tbsp water
- 1/2 to 1 cup favorite veggies ( I used napa cabbage)
Instructions
- Heat about 1 tbsp oil in pan. Add onions and sautee for about 3-4 minutes. Add cabbage and allow leaves to slightly soften. Scoot veggies aside in pan or put in separate bowl.
- Add a bit more oil to pan. Crack 2 eggs into pan and scramble.
- Add veggies to eggs, add 4-5 dashes of liquid aminos (to taste), garlic, and to pan, mix and stir fry everything together for 3-4 minutes. While stir-frying, the mixture may be dry, so add 1-2 tbsp water, to achieve good consistency. Add sesame oil for final added taste.
